The letters of the Greek word for fish, Ichthus, are the first letters of the Greek phrase for Jesus Christ, God's Son, Savior.
Accordingly, people use a fish symbol to distinguish themselves as Christians. Fish represent fertility and renewal of life. Just as fish are born in water, Christians are born in the water of baptism through Jesus, and He wishes all of us to be fishers of men.
